Chicken & Salsa Rice Bake

It can be a struggle to find meals that all five of us like. It is also difficult to find simple recipes with minimal preparation time. Some evenings (ok…most evenings) I’m too busy to stop everything to chop, mix, whisk, saute, etc. So, I was happy when a friend shared this recipe for Chicken & Salsa Rice Bake. It was a hit! (well, I omit the cheese topping on half when my 14 yr old is eating with us. He does not eat cheese.) The prep time is about 10 minutes, if that. Then, I put it in the oven and go about my day… removing the 2 yr old from the kitchen counter, helping the 4 yr old put together a puzzle, letting out 2 barking dogs, and taking care of all of the other random craziness that goes on in our house.


3-5 boneless, skinless chicken breasts

2 cups of instant white rice

1 1/2 cups of water

1 1/2 cups of your favorite chunky salsa

11 oz can of Mexicorn

1 can of cream of chicken soup

1 tbsp. of your favorite taco seasoning

1/2 cup shredded cheese (I use cheddar or mexican blend)


Preheat oven to 375 degrees. Combine rice, water, salsa, mexicorn, soup and taco seasoning in a 9×13 glass baking dish. Stir. Place the chicken breasts on top of the rice mixture. Bake for 45 minutes. Sprinkle cheese on top. Bake an additional 5 minutes or until cheese is melted and bubbly. Enjoy!

#Marchphotoaday – Day 20 {before/after} aka Wedding canvas

I have discovered my new love…canvas prints. I have ordered 3 from Canvas on Demand. My most recent was a 20×32 inch canvas of one of our favorite wedding photos. (our wedding was in Oct 2008)

I was thrilled with the quality of the canvas. Unfortunately the photos from my outdated point and shoot camera don’t do it justice.

We love how it looks hanging over the fireplace in our family room.

 Do you prefer framed prints or canvas? Do you opt for large photos or do you stick to 5×7 and 8×10 photos?

DIY {skateboard} shelving

When we started decorating my teenage son’s bedroom, I looked to Pinterest and Pottery Barn Teen for inspiration. He didn’t want a “theme” bedroom.  We just wanted to incorporate his personality and interests.  When I saw this photo pinned from PBteen, I knew it was almost perfect for his bedroom. 

We liked the PBteen skateboard shelves, but they seemed to be missing something…. trucks and wheels and colorful designs. So, I decided to create our own spin on skateboard shelving.

Materials I used per shelf:
* a skateboard (on sale at K-Mart)
* 2 “L” brackets (from a local hardware store)
* screws (from a local hardware store)

* Screw each of the “L” brackets into the bottom of the skateboard just inside of the trucks.
* Locate studs in the wall.
* Screw the “L” brackets into the wall.

DONE!  Interesting, simple, and inexpensive (we made 2 shelves and ordered a pizza for the same price as one shelf from PBteen) shelving for him to display his artwork, pinewood derby cars, favorite Xbox games, hats, etc.

{delicious} mail

Ever since I was a little girl, I loved getting mail. My grandma wrote me a letter about once a week.  I always looked forward to reading them. Not that she did anything particularly eventful or amazing, but it made me feel closer to her just knowing what little things she did in her daily life.  

To this day, I still run to the mailbox every day just to see what’s inside. Usually its just a stack of bills, junk mail, catalogs, and magazines with an occassional greeting card. But today was different. A small box was waiting for me.

Inside the box was my FREE 12-count box of Green Mountain Naturals Hot Apple Cider K-Cups and a $3 Off coupon for a future purchase. Woo Hoo!! Even though its approximately 80 degrees outside, I’m enjoying a delicious cup of hot apple cider. I love my Keurig single cup brewer. (but not nearly as much as I loved those letters from my grandma)

#Marchphotoaday Day 10 & Day 13

I am having trouble completing the #Marchphotoaday challenge every single day. Most days I don’t remember the daily topic until I’m laying in bed at night. But,  did remember to take photos for the challenge on Day 10 and Day 13.

Harper loves to let out an ear-splitting, high-pitched scream in mommy’s minivan, especially when stopped at red lights. Almost makes me want to run the lights. Almost.

These signs are posted at the indoor water park we visited for our mini spring break family getaway. Not sure why the pool hours are posted as 9am-3pm when it didn’t actually close until 9pm.

Jello Playdough & #Marchphotoaday {Day 9}

Homemade play dough is always a hit at our house. Lincoln loves to help me make it… measuring the ingredients, pouring them into a bowl, and stirring. Then, Harper and Lincoln both love to play with the play dough once it’s cooled. So, I was excited to try the  Homemade Jello Play Dough recipe that I found on Pinterest. (I just happened to find expired strawberry jello when cleaning out the pantry a couple days ago.)
